Four Speciality Varieties for Kitchens That Want More

Shiitake, enoki, oyster and shimeji are four different mushrooms, not stages of one. Each grows its own way, from broad caps to tight clusters and fan-shaped bunches. That gives every variety its own texture, flavour and place on the menu.

Broad cap · Pale gills

Shiitake Mushrooms

Shiitake bring big umami flavour. Their broad brown caps cook down to a firm, meaty bite with a slightly smoky finish, and they hold their shape in a wok, a broth or a long braise. Just as at home in a risotto as in a bowl of ramen.

Enoki Mushrooms

Enoki grow in tight clusters of long, slender white stems topped with tiny caps. Their flavour is mild and their texture is crisp and delicate, so they add interest to a dish without overpowering it. Trim the root base to separate the stems, and always cook them thoroughly before serving.

Oyster Mushrooms

Oyster mushrooms grow in elegant, fan-shaped clusters with soft, velvety caps. They have a delicate, slightly sweet and nutty flavour that some compare to seafood. Cook them gently, whole or torn into large pieces, to show off their shape on the plate.

Shimeji Mushrooms

Shimeji, or beech mushrooms, come in neat clusters of slim pale stems and small brown-grey caps. Cook them before serving: raw, they’re slightly bitter, but heat turns them sweet and nutty. They stay firm in the pan and soak up sauces well, which is why they appear so often in Japanese dishes.

Exotic Mushroom FAQs

  • Are your exotic mushrooms grown in Australia?

Yes. Our exotic mushrooms come from established NSW farms, like the rest of our range.

  • Which exotic mushroom should I choose?

It depends on the dish. Shiitake bring the most flavour to stir-fries, ramen and broths. Enoki add a mild crunch to hotpots and soups. Oysters are the pick for pan-fried sides, tacos and plant-based dishes, and shimeji suit stir-fries, rice dishes and sauces.

  • Can you eat exotic mushrooms raw?

We recommend cooking all four. Shimeji in particular should always be cooked, as heat removes their natural bitterness and brings out their sweet, nutty flavour.

  • How do you prepare enoki mushrooms?

    Replace the answer with:

Trim off the root base and separate the stems, then cook them thoroughly until steaming hot before serving. They suit hotpots, soups, ramen and stir-fries.

  • How should I store exotic mushrooms?

Keep them refrigerated in their original packaging and use them soon after delivery, as most exotic varieties are more delicate than white mushrooms. Avoid washing them before storage, wipe or rinse briefly just before use, and handle oyster mushrooms gently to keep their shape.

  • How do I order exotic mushrooms?

Call 0493 247 999 or send an enquiry through our Contact page. You can order any mix of shiitake, enoki, oyster and shimeji, along with our white and brown mushrooms.

  • Do you deliver exotic mushrooms outside Sydney?

Yes. As well as Greater Sydney, we deliver to the Central Coast and to Wollongong and the Illawarra. See our Delivery Areas page for details.
